Eileen Hughes was born in Detroit, Michigan and moved to the Finger Lakes Region in 1973 where, while running organic farms (a radical idea at the time), she began her love affair with food and the farmers of upstate New York. She began at the Kosmos, a communally run natural foods Restaurant, pre-dating the now famous Moosewood restaurant. From there, Eileen moved next door to the Rongovian Embassy restaurant and learned about Tex Mex cuisine. After a tour of other kitchens she attended the Culinary Institute of America.
In 1993 Eileen began her career with Cornell Dining and was appointed first female Executive Chef at Cornell in 1995. Her passions are family, especially her two grandsons, music thanks to her musician husband, food and community.
